Habanero Hot Sauce

Ingredients

  • 6 garlic cloves, peeled and cut in half
  • ½ C carrot, roughly chopped
  • ½ C white onion, roughly chopped
  • 12 medium habanero chile, orange, fresh stemmed, ~5 oz
  • 1 C apple cider vinegar
  • 2 tsp salt
  • ½ tsp sugar

Instructions

  1. In a medium saucepan combine the garlic, carrot, onion and habaneros with the vinegar and 1 cup of water.
  2. Partially cover and simmer over medium-low heat until the carrots are thoroughly tender, about 10 minutes.
  3. Pour into a blender jar and add the salt. Blend until smooth.
  4. Thin with a little additional water if you think your hot sauce is too thick.
  5. Taste and season with additional salt and sugar if you think necessary.
  6. Pour into jars or bottles and store in the refrigerator until you’re ready to add some dazzle to a dish.
