Habanero Hot Sauce

Ingredients
- 6 garlic cloves, peeled and cut in half
- ½ C carrot, roughly chopped
- ½ C white onion, roughly chopped
- 12 medium habanero chile, orange, fresh stemmed, ~5 oz
- 1 C apple cider vinegar
- 2 tsp salt
- ½ tsp sugar
Instructions
- In a medium saucepan combine the garlic, carrot, onion and habaneros with the vinegar and 1 cup of water.
- Partially cover and simmer over medium-low heat until the carrots are thoroughly tender, about 10 minutes.
- Pour into a blender jar and add the salt. Blend until smooth.
- Thin with a little additional water if you think your hot sauce is too thick.
- Taste and season with additional salt and sugar if you think necessary.
- Pour into jars or bottles and store in the refrigerator until you’re ready to add some dazzle to a dish.
