Loaded Baked Potato Salad

Ingredients

  • 68 medium potatoes, about 3 lb, peeled and cut into 1" cubes
  • ½ lb bacon, cooked and crumbled
  • 6 green onions, chopped
  • 2 celery ribs, finely chopped
  • 2 Tb pimiento, diced and drained
  • ¾ tsp salt
  • ¼ tsp pepper
  • ½ C mayonnaise
  • ½ C sour cream
  • Paprika, celery sticks for garnish

Instructions

  1. Cook potatoes in boiling water over medium heat 15-18 minutes, or until tender
  2. Drain and let cool slightly.
  3. Place potatoes in a large bowl
  4. Add bacon, chopped green onions, and next 4 ingredients
  5. Stir together mayonnaise and sour cream until blended
  6. Pour over potato mixture, tossing gently to coat
  7. Cover and chill at least 1 hour. Garnish, if desired.
