Beef Lo Mein

Chinese takeout style
Ingredients
- Neutral oil, preferably peanut
- 70 g Cabbage
- 30 g Onion, thinly sliced
- 20 g Carrot
- 6 g ginger, minced
- 8½ g garlic, minced
- 45 g Bean Sprouts
- 25 g Scallion, 1" slices
- 15 ml Shaoxing wine
- 16 oz lo mein noodles, or substitute (453 g)
Instructions
Step 1
- For beef, rinse under cold running water for 1 minute, drain well
- Mix in baking soda and massage into meat for 1 minute.
- Mix in other marinade ingredients and marinate for 15 minutes or up to overnight.
Step 2
- For sauce, mix all dry ingredients
- Stir in chicken stock and whisk until all dry ingredients are dissolved
- Mix in wet ingredients. Set aside. (Stir before using).
- Prepare noodles according to package instructions. Drain well and toss with oil.
Step 3
- Heat wok or pan over medium-high heat. Add oil and swirl around until shimmering.
- Add cabbage, onion, and carrot and saute for 1 minute. Set aside.
- Return wok or pan to medium-high heat and add 2 Tb oil.
- After oil is hot, add beef to pan and press down into 1 layer
- Cook until beef is nicely browned and set aside.
Step 4
- Return wok or pan to medium-high heat.
- Add 1 Tb oil and 1 Tb ginger and 1 Tb garlic.
- Saute for 10-20 seconds.
- Add noodles and toss with ginger and garlic and mix until noodles are pliable.
- Add vegetables and beef and toss with noodles until thoroughly mixed.
- Move noodles to one side and deglaze with 1 Tb Shaoxing wine. Toss with noodles.
- Stir sauce mixture again to make sure cornstarch hasn’t settle at the bottom.
- Move the noodles to one side and add the sauce to the pan and not on top of the noodles
- Allow it cook for 15-20 seconds to thicken and turn off the heat.
- Stir the noodles into the sauce.
- Add green onions and bean sprouts. Mix thoroughly and serve.
Beef Marinade
Ingredients
- 8 oz flank steak or skirt steak, thinly sliced across the grain
- ¼ tsp baking soda
- ¼ tsp cornstarch
- ¼ tsp sugar
- 1 pinch salt
- ¼ tsp light soy sauce
- ½ tsp Shaoxing wine
- ½ tsp neutral oil
Sauce
Ingredients
- 1 Tb cornstarch
- 1½ tsp sugar
- ¼ tsp white pepper
- ½ tsp kosher salt
- ¼ C chicken stock
- 2 Tb light soy sauce
- 1 tsp dark soy sauce
- 2 Tb oyster sauce
- 1 tsp toasted sesame oil
