Ingredients
- 1 bottle Vodka, good quality. Keep the Bottle!
- 5 –8 Strips Bacon, cooked crisp and chopped up
- 2 –3 Coffee Filters
- Large Strainer
- Sterilized Glass Jar with Lid
- Optional: Peppercorns, Garlic Cloves, Herbs
Instructions
Step 1
- Fry your bacon crisp but don’t burn it
- Drain on some paper towels. Chop it into pieces small enough to fit into your glass jar.
- Pour in your vodka.
- Add your optional ingredients – making sure to trim, skin and clean where necessary.
- Shake gently, cap off the bottle and store in a cool, dark location.
- Note: It is not necessary to refrigerate as the alcohol acts as the antibacterial pickling agent.
- Allow to sit for three weeks.
Step 2
- Place your jar in the freezer so the fat will float to the top and congeal.
- Lift most of the fat out of your vodka.
- Place your funnel into the saved vodka bottle, then place 2-3 coffee filters together into a large strainer and place this into a funnel.
- Remove any remaining large fat particles with a spoon
- Pour the bacon infused vodka into the filter lined strainer or funnel back into original vodka bottle, cap off.
