Ingredients

  • 120 ml (4 fl oz) filtered water
  • 2 Tb sugar
  • 2 Tb rice vinegar
  • 4 Tb fish sauce
  • 4 limes, juice of
  • ½ carrot, grated
  • 1 large garlic clove, finely grated
  • 4 bird's eye chillies, finely sliced

Instructions

  1. Place the water and sugar into a jug, stirring until the sugar is completely dissolved.
  2. Add the rest of the ingredients, stir well, and then transfer the mixture into an airtight container. Store in the fridge for up to 2 weeks.
