Baked Beans

If smoking ribs, add some of the rib "jus" after the wrapped cooking stage for extra flavor.
Sub pork belly or smoked rib trimming scraps for bacon.
Ingredients
- 200 g Navy beans, dry
- 200 g Sweet onion(s), medium dice
- 360 g Water
- 80 g Tomato paste
- 40 g Molasses
- 40 g Brown sugar
- 16 g Salt
- 16 g Garlic, clove
- 12 g Worcestershire sauce
- 8 g Mustard powder
- 5 g Baking soda
- 1 g Black pepper, course ground
- 240 g Bacon, 1.5 cm cubes
- 32 g Apple cider vinegar
Instructions

Soak 200g dry navy beans for at least six hours.

Strain and reserve the beans. This will yield about 400g soaked beans.

Combine water, tomato paste, molasses, brown sugar, salt, worcestershire, mustard powder, baking soda, black pepper in a pressure cooker and mix.

Add the 400g soaked beans and onions

Cook at full pressure for 25 minutes

When finished, remove the pressure cooker from the heat source and let it cool enough to depressurize.

Add bacon and cook again at full pressure, about three minutes

Remove the pressure cooker from the heat source and let it cool enough to depressurize.

Stir in vinegar; serve
