Corn Chowder

Ingredients

  • 6 cans cream corn, 14.75 oz ea.
  • 2 cans whole corn, 14.75 oz ea.
  • 1 lb maple bacon
  • 1 vidalia onion, large, minced
  • 1 lb bag Orida hash brown, diced
  • 1 qt light cream
  • 1 Tb thyme, fresh, chopped
  • salt, pepper, cayenne, to taste

Instructions

  1. Crisp bacon, reserve 1-2 Tb rendered fat.
  2. Sweat onions in bacon fat with 1/4 tsp salt.
  3. Add all ingredients to a crock pot, set temperature to high.
