Pistachio Crusted Rack of Lamb

Ingredients

  • 2 racks lamb, fully trimmed, just under 1½ lb each
  • 1 tsp Herbes de Provence, or dried Italian herb blend
  • salt and fresh ground black pepper, to taste
  • 1 Tb vegetable oil or olive oil for searing
  • 3 Tb Dijon mustard
  • C roasted pistachios, finely chopped
  • 2 Tb plain bread crumbs
  • 1 Tb butter, melted
  • 1 tsp olive oil
  • 1 pinch salt and fresh ground black pepper

Instructions

  1. Combine pistachios, bread crumbs, butter, olive oil, salt, and pepper
  2. The cooking time given in the video of 25 minutes will work if you are doing one or two, but if you load up the oven for a large group, you'll obviously need to increase the cooking time, as the oven temperature will drop.
  3. Use a thermometer to check the internal temperature.
  4. Remove at between 125 and 130F. for a nice pink center.
