Pistachio Crusted Rack of Lamb

Ingredients
- 2 racks lamb, fully trimmed, just under 1½ lb each
- 1 tsp Herbes de Provence, or dried Italian herb blend
- salt and fresh ground black pepper, to taste
- 1 Tb vegetable oil or olive oil for searing
- 3 Tb Dijon mustard
- ⅔ C roasted pistachios, finely chopped
- 2 Tb plain bread crumbs
- 1 Tb butter, melted
- 1 tsp olive oil
- 1 pinch salt and fresh ground black pepper
Instructions
- Combine pistachios, bread crumbs, butter, olive oil, salt, and pepper
- The cooking time given in the video of 25 minutes will work if you are doing one or two, but if you load up the oven for a large group, you'll obviously need to increase the cooking time, as the oven temperature will drop.
- Use a thermometer to check the internal temperature.
- Remove at between 125 and 130F. for a nice pink center.
