5 min baguettes

Ingredients

  • 950 g Bread flour, higher protein content, 11.5g / 100g
  • 16 g salt
  • 2 g yeast
  • 730 ml water

Instructions

  1. Mix all ingredients until combined, the dough will amalgamate into a ball, ~2 min.
  2. Cover and let it rise for 8 to 10 hours, n the cold oven.
  3. Remove the middle shelf from the oven and preheat oven to 485F
  4. Line the oven baking shelf with parchment paper
  5. Sprinkle flour on bench or pizza plate
  6. Using a dough scraper transfer the dough onto the plate.
  7. Sprinkle again some more flour on top to avoid sticking
  8. Cut dough into 4 equal sections, but you can also make 2, 3, or 5.
  9. Stretch each piecegently into a baguette shape and place on lined oven shelf
  10. Bake ~25 min until dark golden brown
