Ingredients
- 950 g Bread flour, higher protein content, 11.5g / 100g
- 16 g salt
- 2 g yeast
- 730 ml water
Instructions
- Mix all ingredients until combined, the dough will amalgamate into a ball, ~2 min.
- Cover and let it rise for 8 to 10 hours, n the cold oven.
- Remove the middle shelf from the oven and preheat oven to 485F
- Line the oven baking shelf with parchment paper
- Sprinkle flour on bench or pizza plate
- Using a dough scraper transfer the dough onto the plate.
- Sprinkle again some more flour on top to avoid sticking
- Cut dough into 4 equal sections, but you can also make 2, 3, or 5.
- Stretch each piecegently into a baguette shape and place on lined oven shelf
- Bake ~25 min until dark golden brown
