Cheeseburger Egg Rolls

Ingredients

  • Canola Oil
  • Olive Oil
  • 1 lb 85% ground beef
  • 8 oz iceberg lettuce
  • ½ C kosher dill pickles, diced
  • ½ C onion, diced
  • salt and pepper, to taste
  • 1 egg
  • 2 Tb water
  • 15 slices American Cheese, really
  • 15 spring roll wrappers or egg roll wrapper, spring roll wrappers are lighter and not as greasy
  • sesame seeds

Instructions

Step 1
  1. Saute onions in olive oil over medium-high heat
  2. Add beef and brown, season with salt and pepper
  3. Off heat stir in lettuce and pickles, stir until lettuce is wilted. If there is extra liquid drain.
  4. Cool mixture
  5. Whisk together egg and water in bowl for the egg wash.
  6. Assemble egg rolls by placing a slice of cheese in center of spring roll wrapper
  7. Top with a couple of Tb of mixture, brush all edges with egg wash.
  8. Roll according to wrapper package directions.
  9. Brush top with egg wash and sprinkle sesame seeds.
Step 2
  1. Heat canola oil in large pot to 375F.
  2. Blanch egg rolls in batches and drain on paper towels.
  3. Refry the rolls a second time until golden brown and drain again on paper towels.
  4. When cool enough to handle cut in half on a bias.
  5. Serve with special dipping sauce.
