Cheeseburger Egg Rolls

Ingredients
- Canola Oil
- Olive Oil
- 1 lb 85% ground beef
- 8 oz iceberg lettuce
- ½ C kosher dill pickles, diced
- ½ C onion, diced
- salt and pepper, to taste
- 1 egg
- 2 Tb water
- 15 slices American Cheese, really
- 15 spring roll wrappers or egg roll wrapper, spring roll wrappers are lighter and not as greasy
- sesame seeds
Instructions
Step 1
- Saute onions in olive oil over medium-high heat
- Add beef and brown, season with salt and pepper
- Off heat stir in lettuce and pickles, stir until lettuce is wilted. If there is extra liquid drain.
- Cool mixture
- Whisk together egg and water in bowl for the egg wash.
- Assemble egg rolls by placing a slice of cheese in center of spring roll wrapper
- Top with a couple of Tb of mixture, brush all edges with egg wash.
- Roll according to wrapper package directions.
- Brush top with egg wash and sprinkle sesame seeds.
Step 2
- Heat canola oil in large pot to 375F.
- Blanch egg rolls in batches and drain on paper towels.
- Refry the rolls a second time until golden brown and drain again on paper towels.
- When cool enough to handle cut in half on a bias.
- Serve with special dipping sauce.
