Ingredients
- 4 cloves garlic, peeled
- ½ lemon, juiced
- 80 ml olive oil
- salt, to taste
Instructions
- Place the peeled garlic cloves and a pinch of salt into a mortar and pestle.
- Grind the garlic into a completely smooth paste.
- Add the juice of half a lemon to the garlic paste and stir until fully combined.
- Slowly start pouring in the olive oil while mixing continuously.
- Make sure to fully emulsify each addition of oil before adding more.
- Once all the oil is incorporated, check for seasoning, adjust if needed, and your aioli is ready to serve.
