Aioli

Ingredients

  • 4 cloves garlic, peeled
  • ½ lemon, juiced
  • 80 ml olive oil
  • salt, to taste

Instructions

  1. Place the peeled garlic cloves and a pinch of salt into a mortar and pestle.
  2. Grind the garlic into a completely smooth paste.
  3. Add the juice of half a lemon to the garlic paste and stir until fully combined.
  4. Slowly start pouring in the olive oil while mixing continuously.
  5. Make sure to fully emulsify each addition of oil before adding more.
  6. Once all the oil is incorporated, check for seasoning, adjust if needed, and your aioli is ready to serve.
