Pork Chops And Glazed Apples

Ingredients
- 1 strip thick-sliced bacon, chopped
- ¼ C honey
- 2 Tb slivered red onion
- 1 Tb spicy brown mustard
- 1 tsp fresh thyme, chopped
- 1 tsp cider vinegar
- Salt, to taste
- 2 pork chops, boneless, 5–6 oz each
- 1 dash salt
- 1 dash black pepper
- 1 dash nutmeg, ground
Instructions
- Preheat grill to medium-high. Brush grill grate with oil.
- Sauté bacon until crisp. Transfer bacon to a paper-towel-lined plate; set aside.
- Whisk together honey, onion, mustard, thyme, and vinegar in a bowl
- Season with salt; set aside.
- Grill apples, covered, turning once, until softened, about 4 minutes
- Remove from heat. Chop apples and stir into honey mixture.
- Season chops with salt, pepper, and nutmeg, and coat chops with nonstick spray.
- Grill chops, covered, 3–4 minutes per side until pork reaches an internal temperature of 145F on an instant-read thermometer
- Remove from the grill, tent with foil, and let rest 5 minutes. Serve chops with apples and garnish with bacon bits.
