Pork Chops And Glazed Apples

Ingredients

  • 1 strip thick-sliced bacon, chopped
  • ¼ C honey
  • 2 Tb slivered red onion
  • 1 Tb spicy brown mustard
  • 1 tsp fresh thyme, chopped
  • 1 tsp cider vinegar
  • Salt, to taste
  • 2 pork chops, boneless, 5–6 oz each
  • 1 dash salt
  • 1 dash black pepper
  • 1 dash nutmeg, ground

Instructions

  1. Preheat grill to medium-high. Brush grill grate with oil.
  2. Sauté bacon until crisp. Transfer bacon to a paper-towel-lined plate; set aside.
  3. Whisk together honey, onion, mustard, thyme, and vinegar in a bowl
  4. Season with salt; set aside.
  5. Grill apples, covered, turning once, until softened, about 4 minutes
  6. Remove from heat. Chop apples and stir into honey mixture.
  7. Season chops with salt, pepper, and nutmeg, and coat chops with nonstick spray.
  8. Grill chops, covered, 3–4 minutes per side until pork reaches an internal temperature of 145F on an instant-read thermometer
  9. Remove from the grill, tent with foil, and let rest 5 minutes. Serve chops with apples and garnish with bacon bits.
