Ingredients

• 1 C cornmeal
• ¾ C flour, all-purpose
• 2 tsp baking powder
• 1½ Tb sugar
• 1 tsp salt
• 1 egg, large, beaten
• 1 C beer
• ¾ C onions, finely chopped
• 1 –2 Tb jalapeno peppers, finely chopped
• vegetable oil

Instructions

1. In a mixing bowl, add the first 5 ingredients; stir to combine.

2. Add eggs, beer, onion, and jalapeno pepper; stir to combine.

3. Drop batter by with small scoop into 2" deep hot oil, 365F

4. Cook a few at a time, turn once.

5. Fry for 1-2 minutes or until hush puppies are golden brown.

6. Drain on paper towel lined plates; serve hot.
