Asian Green Bean Salad

Ingredients
- 1 bag french green beans, trim off tough ends
- 2 C ice
- 2 garlic cloves, finely diced
- 1 inch ginger, fresh, finely diced
- 2 Tb rice vinegar
- 1 Tb sesame oil
- 1 tsp soy sauce
- 1 pinch red pepper flakes
- 4 green onions, tops and tails removed, diagonally finely sliced
- 3 Tb fresh cilantro, finely chopped
- 1 handful French Fried Onions or crispy shallots
Instructions
- Blanch in boiling water for 3 minutes, drain
- Drop beans into an ice bath – keeps the color and stops cooking, pat dry with paper towels
- In a small bowl mix asian dressing: garlic, ginger, rice vinegar, sesame oil, soy
- In a large bowl, coat green beans, green onions, cilantro, red pepper flakes with dressing
- Garnish with French Fried Onions
