Short Crust Patstry with Lard

Ingredients

  • 500 g All purpose flour (18oz)
  • 125 g Butter, cold (4.4oz)
  • 125 g Lard, cold (4.4oz)
  • 90 g Water, icy cold (6tbls)
  • 8 g Salt (1 tsp)

Savory Short Crust Pastry

Ingredients

  • 340 g All Purpose Flour (12oz)
  • 170 g Butter, very cold (6oz)
  • 65 g Water, ice cold
  • 8 g Salt (1 tsp)

Instructions

  1. Using a food processor with blade tool, add the flour, salt, and cold butter.
  2. Pulse until you have a fine breadcrumb consistency, 30-45 seconds.
  3. With the machine running, slowly pouring in the ice-cold water.
  4. Run until pastry starts rolling around the machine, 30-45 seconds.
